Another great way to eat courgettes when they are going mad in the garden!
Method of preparation / cooking
Mix the grated courgette, flour and parmesan.
Shape into small balls and then flatten gently.
Fry in a non-stick pan with the olive oil for 2-3 mins each side on medium heat, until golden brown. Serve straight away with side salad and humus!
