Red Onion and Capsicum Jam

Capsicums 2 large red
Onions 3 very large red
salt 1 Tablespoon
cider vinegar 1 cup
dark cane sugar 1 cup
sweet chilli sauce 3 Tablespoons

Method of preparation / cooking

Slice the red onions finely, ( I use a food processor to do this). Put into a large non-metallic bowl and sprinkle with the salt. Let stand for 1 hour, then rinse in cold water and drain well. Cut the red capsicums in half, remove stalk and seeds and slice thinly. Dissolve sugar in the vinegar, stirring and bring to the boil. Simmer for 45 minutes. Add chilli sauce stirring in, mixture should be thick and syrupy. Bottle and seal.
