Broccoli and blue cheese soup

Broccoli 1 kg - include stems and leaves if desired
Garlic 2-3 cloves
Oregano (Wild Marjoram) handful (fresh)
Parsley 1 sprig
blue cheese 1 wedge
flour 2 tablespoons
milk or cream 250 mls
butter 2 tablespoons
onion or vegetable stock 2 litres

Method of preparation / cooking

simmer until cooked (must be soft) the roughly chopped broccoli with herbs and garlic in the onion or vegetable stock. (pepper may be added if desired)

in a seperate pot, make blue cheese sauce by melting butter, adding in the flour, stirring until frothy and then gradually adding in the mik or cream, stirring constantly until thick and creamy. crumble in the blue cheese and stir on a low heat until cheese has melted.

blend cheese sauce into the broccoli mix and mash or puree until desired consistency.
