Zucchini Fritters (using rice flour)

Great light snack or entree, serve with tomato relish and sour cream. Gluten free!
Method of preparation / cooking
1/Grate the Courgettes and squeeze the excess moisture then transfer to a bowl.
2/Finely chop the onion and prosciutto.
3/In a large bowl , whisk together the oil, eggs, rice flour, Parmesan, add salt and pepper. Whisk until the batter is smooth, then add the courgettes, onion, basil, prosciutto and basil and mix well.
4/Heat a little oil in a pan over a medium heat and cook tablespoons of the mixture, cook on both sides until golden brown and set.
