Zucchini Pickle

Capsicums 2 each
Courgettes 1 kg
Onions 750gm
salt 1/4 tsp
water 4 cups
sugar 2 cups
mustard seeds 1 tablespoons
celery seeds 2 tablespoons
tumeric 1 1/2 tsp
cider vinegar 2 cups
cornflour 1 tablespoon

Method of preparation / cooking

1/ Cut the zucchini, red capsicum and onion into very small dice, put into a large bowl and mix with salt.

2/ Let stand for 1/2 hour then add the water, stir again and pour through large sieve or colander, discard the salty liquid.

3/ Place drained vegetables, sugar, seeds, turmeric & vinegar into a pot, bring to boil and simmer for 30 minutes stirring often.

4/ Mix cornflour to a paste using 3 tablespoons of water, stir paste into pickle and simmer till the pickle thickens.

5/ Poor directly into sterilized jars, seal and let cool.
